Place all the ingredients into a saucepan and bring to a gentle simmer.
Cook for 25–30 minutes , stirring occasionally, until the plums are soft and the mixture has thickened.
Blend until smooth using a stick blender or food processor.
Pour into a sterilised jar and allow to cool.
Serving Suggestions:
Perfect with roast duck, pork, chicken, spring rolls or as a dipping sauce. Store in the fridge for up to 2 weeks , or freeze for longer storage.
